Cereal Bars - Gluten Free

Cereal Bars are loaded with gluten free corn flakes, oats and chocolate chips.  With just a few ingredients you can whip up this simple dessert recipe.


Eat these dessert squares warm or wait until they are completely cooled before slicing.

This recipe yields about 30 servings, but this is an estimate and number of servings will depend on your serving size preference.

Serve it as a stand alone dessert or add Cereal Bars to an assorted dessert tray to suit any occasion.

These chewy, chocolatey, gluten free bars are a hit at our house.

The addition of psyllium husk powder acts as a binder and adds to the chewiness of this dessert bar.

The first step to make these Cereal Bars was to prepare the gluten free corn flakes by using a rolling pin to crush them up.

Then I melted some butter in the microwave.

I mixed the melted butter and granulated sugar together in a mixing bowl using a large wooden spoon.

Next I  stirred in some large eggs and vanilla extract.

After stirring in the eggs until well blended, I measured in some Bob's Red Mill 1 to 1 Gluten Free Baking Flour, the crushed corn flakes, quick oats, psyllium husk powder, baking powder and salt.

I used the wooden spoon again to mix in all the dry ingredients until well combined.

After stirring the batter I greased a 9" x 13" baking pan. 

I spread the batter evenly in the pan.

Then I sprinkled some chocolate chips on the top.

Next I placed the pan into a preheated 350F oven for about 40 - 45 minutes or until it was light golden brown.

Once cooked, I removed the pan from the oven and allowed the Cereal Bars to cool.

Once cooled it is time to serve up these delicious, chewy bars.

To serve I cut them into squares, or small rectangles.

Then I transferred them to a serving plate.

Warm or cooled these bars are a tasty addition to any gluten free treat tray, or cut bigger servings and top them with whipped cream or ice cream for a stand alone dessert.

  • ¾ cup crushed Gluten Free corn flakes

  2. Crush the gluten free corn flakes in a ziploc bag using a rolling pin. Set aside.
  3. Combine the melted butter and the granulated sugar.
  4. Stir in the eggs and vanilla extract until well combined.
  5. Measure in the Bob's Red Mill 1 to 1 Gluten Free Baking Flour, quick oats, psyllium husk powder, salt, baking powder and the crushed corn flakes. Stir to combine.
  6. Once the batter is well mixed spread it out evenly in the prepared 9" x 13" baking pan.
  7. Sprinkle the semi sweet chocolate chips evenly over the top of the batter.
  8. Place baking pan in the preheated 350F oven for 40 - 45 minutes, until light golden brown.
  9. Remove from oven.
  10. Allow to cool before cutting into serving size pieces.
  11. Serve and enjoy!
