Dressed Up Egg Salad - Instant Pot

Egg salad sandwiches are one of my favourites.  I just never remember to have hard boiled eggs ready so I do not eat them very often.

Thanks to the Instant Pot egg loaf method, egg salad sandwiches and egg dip for crackers are now on the menu a couple of times a month!

This creamy, flavourful spread makes a great sandwich.

Switch it up and use it as a dip for some gluten free crackers.  This is a great lunch idea to avoid soggy bread!

No matter how you choose to eat Dressed Up Egg Salad you will enjoy every mouthful.

To begin making Dressed Up Egg Salad I made an Instant Pot Egg Loaf.  How to make it was described on a Facebook page and it looked so easy I decided to give it a go.

For the Instant Pot Egg Loaf I cracked 10 eggs into a greased Instant Pot safe cake pan. Then I poured 1 ½ cups of water into the Instant Pot.  Next I placed the cake pan on a trivet in the Pot.

I place the lid on Instant Pot, turned the handle to the sealing position and set to Pressure Cook High for 6 minutes. After it was done cooking I let it do a Natural Release for 5 minutes before turning the steam release handle to the venting position.

After taking the cake pan with the egg loaf out of the Pot I used a potato masher to crumble up the eggs.

Once the eggs were mashed I added in some Miracle Whip and the salsa of my choice.  You choose the heat.

Then I stirred in the Miracle Whip and Salsa.  Decide if the consistency is to your liking.  You can easily add more Miracle Whip or salsa to get the consistency you prefer.

Next I added in some diced celery, cut up green onion, salt and pepper.

The final addition to Dressed Up Egg Salad was some cut up cooked bacon.

Once the bacon was stirred in I put some gluten free bread in the toaster and prepared my toasted Dressed Up Egg Salad sandwich.

For work lunches I prefer to take the egg mixture separately and use it as a cracker dip.

Whether you use Dressed Up Egg Salad in a sandwich, toasted sandwich or as a cracker dip, you will enjoy its blend of flavours and touch of heat depending on your choice of salsa.

Ingredients You'll Need to Make Dressed Up Egg Salad:

  • 10 eggs, large
  • ½ cup salsa of your choice strained
  • ½ cup Miracle Whip (divided)
  • 2 green onions sliced
  • ½ cup celery diced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 6 slices cooked bacon broken up
  • 1 ½ cups water for Pot

How to Make Dressed Up Egg Salad:

  1. Follow the recipe for making an egg loaf in the Instant Pot or hard boil eggs on top of the stove.
  2. For the Instant Pot Egg Loaf crack 10 eggs into a greased Instant Pot safe cake pan. Put 1 ½ cups of water into Instant Pot. Place cake pan on trivet. Place lid on Instant Pot, turn steam release handle to sealing position and set to Pressure Cook High for 6 minutes. After cooking let it do a Natural Release for 5 minutes before turning steam release handle to the venting position.
  3. Break eggs up using a potato masher.
  4. Add the strained salsa and half of the Miracle Whip. Stir to combine. Decide based on preferred consistency whether or not to add the remaining Miracle Whip.
  5. Dump in the cut up green onion, chopped celery, salt and pepper. Stir to combine.
  6. Cut up the bacon and stir it into the egg mixture.
  7. Once combined serve as egg salad sandwiches or use as a dip for crackers.
  8. Enjoy!
