Instant Pot BBQ Pork and Rice

Instant Pot BBQ Pork and Rice is an easy one pot meal loaded with pulled pork flavour.  This quick pressure cooker recipe would be great choice for a busy week night meal.

From prep to finished product you will have a delicious meal to serve in under 40 minutes.  Just add your favourite salad or vegetables to complement this dish.

To begin making Instant Pot BBQ Pork and Rice I cut 4 loin chops into bite size pieces.  I also sliced up some yellow onion.

Then I  put some olive oil in the Instant Pot, turned the Pot to the Saute Normal function for 4 minutes and dumped in the cut up pork and sliced onion.

When the Pot turned off I poured in two cups of water and used it to deglaze the Pot.  

This is a very important step that involves scraping any food bits off the bottom of the Pot so you avoid the Burn message when the Pot is coming to pressure.

After deglazing the Pot I sprinkled in some long grain white rice.  But I DID NOT STIR.

I used a large wooden spoon to gently push the rice into the liquid in the Pot.

After the rice was submerged I dumped in some gluten free bbq sauce (choose your favourite), some garlic powder, salt and pepper.  I DID NOT STIR.

Then I place the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 4 minutes.

Once the Instant Pot was done cooking, I allowed it to do a Natural Release for 5 minutes before turning the steam release handle to the venting position.

Next I removed the lid.

After stirring the contents of the Pot I stirred in a bit more bbq sauce.  You can decide whether or not this step is necessary based on your personal preference after you see it cooked.

Next I let everything sit for a couple of minutes.

Then I scooped out individual servings for everyone to enjoy.

How to Make Instant Pot BBQ Pork and Rice:

  1. Cube the pork chops into bite size pieces.
  2. Slice the yellow onion.
  3. Add the oil to the Instant Pot and turn to the Saute Normal function for 4 minutes.
  4. Saute the pork and onion.
  5. When the Pot turns off add the water to the Pot. Deglaze the Instant Pot well scraping any bits from the bottom.
  6. Sprinkle in the rice but do not stir. Push the rice grains down into the liquid gently.
  7. Add 1 cup of the bbq sauce and do not stir.
  8. Sprinkle in the spices but do not stir.
  9. Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 4 minutes.
  10. Once the Instant Pot is done cooking, allow it to do a Natural Release for 5 minutes before turning the steam release handle to the venting position.
  11. Remove the lid and stir the contents well.
  12. At this time decide whether or not you want to add the remaining 1/2 cup of bbq sauce. It is based on personal preference. I did add it.
  13. Allow to sit for a couple of minutes to heat up the added bbq sauce.
  14. Serve and enjoy!

Made this tonight for supper. Rice was as done S we'd like but it has a great flavor. I think next time I'll add some pineapple
