To begin making Instant Pot Lemon Chicken I turned the Instant Pot to the Saute Function and added some olive oil.  

I added in the boneless, skinless, chicken thighs in two batches and browned them on both sides.

After browning I removed them to a plate.

Next I prepared some chicken broth and added in the zest, plus the juice of one lemon before pouring it into the Pot.

 

I scraped all the brown bits from the bottom of the Pot so I would not get a burn message later.

Then I put the trivet in the Pot and arranged the 12 chicken thighs on top of it.

I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 7 minutes.

When the Instant Pot was done cooking, I let it do a Natural Release for 2 minutes before I turned the steam release handle to the venting position to finish with a quick release.

After removing the chicken thighs to a plate I turned the Instant Pot to the Saute Function again and stirred in some lemon pie filling powder until the sauce had thickened.

Then I returned the chicken to the Pot.

I stirred until all the chicken thighs had been coated in the lemon sauce.

Serve Instant Pot Lemon Chicken smothered in the tangy sauce.  This quick and easy recipe is sure to satisfy your family after a busy day of activities.  Add your favourite sides.

I sprinkled dried basil on top of mine before serving.  Dried parsley would work nicely as well.

  9. Turn the Pot to the Saute Function and add the lemon pie filling powder. Stir until the sauce thickens.
  10. Return the chicken thighs to the Pot and stir to coat them with the sauce.
  11. Serve and enjoy by pouring extra sauce over the thighs when serving.
  12. Optional: Sprinkle dried basil or parsley over thighs before serving.
