Irish Cream Fudge

Irish Cream Fudge is a creamy, decadent treat that will earn you rave reviews.  This easy recipe does not require a candy thermometer and can be made in minutes.

 

Then just let it harden for a couple of hours and enjoy!

This naturally gluten free recipe can yield 36 to 42 servings but will depend on how you choose to slice it up!

I used Bailey’s Irish Cream but you can use your favourite brand.

Extra flavour is added with a layer of Irish Cream flavoured chocolate.

Before starting to cook the Irish Cream Fudge I greased an 8 x 8 inch baking pan and lined it with a parchment paper sling.

Then I placed a medium sized sauce pan on the stove, added a half pound of butter, some evaporated milk, brown sugar and a bit of Bailey’s Irish Cream.

I turned the heat to medium.

I occasionally stirred these ingredients together until the butter had melted.  Once the butter melted I stirred it continuously until it started to bubble.

When it started to bubble I stopped stirring and allowed it to boil for 7 minutes.

After 7 minutes I removed the fudge from the heat and poured it into a large Pyrex measuring cup.

Then I stirred in more of the Bailey’s Irish Cream.

Next I melted some chocolate in the microwave on low.

I stirred in a bit of almond milk to help with the melting process.

Once the chocolate had melted I stirred in some Bailey’s Irish Cream.

Next I gradually stirred in the required amount of icing sugar.

I made sure the icing sugar was well incorporated.

After scraping the hot fudge into a greased 8 x 8 inch baking pan lined with parchment paper, I spooned the melted chocolate on top.

I spread the chocolate evenly over the fudge.

Once the fudge was hard I used the parchment paper to remove it from the pan.

Then I used a very sharp knife to cut the fudge into squares.

Enjoy this decadent dessert square any time of the year, with its smooth flavour and creamy texture.

Ingredients You’ll Need to Make this Irish Cream Fudge:

  • 1/2 lb butter
  • 3 cups brown sugar
  • 2/3 cup evaporated milk
  • 4 tbsp Irish Cream (divided)
  • 1/2 cup chocolate chips (can use more for thicker layer if prefer)
  • 1 tbsp almond milk (optional)
  • 2 1/4 cups icing sugar

How to Make Irish Cream Fudge:

  1. Grease an 8 x 8 inch baking pan. Line bottom of pan and 2 sides with a parchment paper sling for easy removal.
  2. Place a medium sized sauce pan on the stove and dump the butter in.
  3. Turn the burner to medium heat.
  4. Add the brown sugar, evaporated milk and 2 tbsp of the Irish Cream. Stir occasionally until butter melts and then stir continuously.
  5. Once it begins to boil stop stirring and allow to boil for 7 minutes.
  6. Melt chocolate chips slowly in microwave on a low level. 
  7. Add 1 tbsp of Irish Cream to melted chocolate chips.  Add the milk if not spreadable yet.
  8. Remove fudge from heat and pour into a pyrex measuring cup or bowl.
  9. Stir in the 1 tbsp of Irish Cream.
  10. Gradually stir the icing sugar into the fudge until fully integrated.
  11. Scrape into the prepared pan.
  12. Spread the melted chocolate over top of the fudge in the pan.
  13. Allow to set for a few hours.
  14. Use parchment paper to lift fudge out onto cutting board and cut into squares with a sharp knife.
  15. Serve and enjoy!
