To begin making Micro Mini Egg Peanut Clusters I placed chocolate in a large microwaveable measuring cup.  This time I used milk chocolate chips and semi-sweet chocolate chips.

Then I placed the chocolate chips in the microwave.  I melted them on high for 1 minute.

While the chocolate was melting I lined a cookie sheet with wax paper.

After a minute I removed the chocolate from the microwave and gave it a stir.  I then returned it to the microwave for 20 second intervals, stirring after each interval.

I continued with the intervals until the chocolate was smooth.

Then I dumped in some roasted unsalted peanuts.

I also dumped in some gluten free crisp rice cereal.

I stirred until the peanuts and cereal were all coated in the melted chocolate.

Then I folded in some Micro Mini Eggs.

Next I used a tablespoon to drop the chocolate mixture onto the prepared cookie sheet.  You might need more than one sheet depending on the size and spacing you use for your clusters.

After all the mixture was used up, I placed the cookie sheets in the fridge for a couple of hours to allow the chocolate to set.

Micro Mini Egg Peanut Clusters are the perfect balance of chewy, crisp, and rich—never too heavy, just right.

They come together beautifully in rustic little clusters, giving them a homemade, charming look that’s perfect for sharing.

Each bite delivers a satisfying contrast between creamy chocolate, crunchy peanuts, and airy crisp rice cereal.

Whether you’re setting them out for guests or sneaking a few for yourself, they bring a fun, nostalgic crunch that keeps you coming back for more.

FAQs:

How do I store Micro Mini Egg peanut clusters?

Store Micro Mini Egg peanut clusters in an airtight container at room temperature for the best texture. Keep them in a cool, dry place away from direct sunlight or heat, as this will prevent the chocolate from melting or becoming dull. They’ll stay fresh and crunchy for about 1 to 2 weeks.

If your kitchen runs warm, you can refrigerate them to keep the chocolate firm, but let them sit at room temperature for a few minutes before eating so the texture isn’t too hard. For longer storage, these clusters freeze well—place them in a freezer-safe container and store for up to 2 months. Thaw at room temperature before serving to maintain their crisp, crunchy bite.
