To begin making Penuche Frosting I melted some butter in a sauce pan over medium heat.
Then I dumped in some brown sugar.
I stirred until the mixture came to a boil.
Then I removed the pan from the heat and poured in some almond milk.
Once the almond milk was incorporated, I stirred in 3 cups of icing sugar, one cup at a time.
The icing will get a little stiffer as it cools down.
I allowed the frosting to cool completely.
Once cooled I checked the spreading consistency to see if it would need a bit more icing sugar or a bit more milk. I find the spreading consistency has always suited my needs but you may want to make adjustments to suit your needs.
Then I spread the delicious Penuche Frosting over the top of some cupcakes.
