This Venison Meatloaf recipe is an easy and quick recipe to prepare at the end of your day. The addition of some salsa verde, gives this wild game recipe an extra kick.
This gluten free version includes a mixture of ground venison and ground pork.
Serve it with your favourite sides and you will have a meal your whole family will enjoy!

The first thing I did was dice enough yellow onion to make 1/3 cup.
Then I dumped the ground venison and ground pork into a large mixing bowl.
Now I added the diced onion, gluten free bread crumbs, large eggs, cocoa, salt and pepper to the meat in the bowl.
I mixed these ingredients well. I used my hands to finish the mixing process.
Then I lined a 9″ x 5″ loaf pan with some tinfoil and sprayed it well with cooking spray.
I packed the meat mixture into the prepared loaf pan.
Then placed it in the preheated 350F oven for 20 minutes.
While the Venison Meatloaf cooked I prepared the sauce by pouring some salsa verde and bbq sauce into a small bowl. Any gluten free bbq sauce works for the sauce.
I stirred the ingredients together well.
After 20 minutes I removed the meatloaf from the oven and covered it with most of the sauce. I reserved about 1/2 cup of the sauce.
I returned the meatloaf to the oven for another 40 minutes.
The Venison Meatloaf will be ready after about 1 hour of cooking or when it reaches an internal temperature of 160F.
I let the meatloaf sit in the pan for about 5 minutes before using the tinfoil to lift it out onto a cutting board to slice.
If desired you could use some of the reserved sauce to top each slice when serving. Add your favourite sides for a complete meal.

- Remove from the oven and allow to cool in the pan for 5 minutes.
- After 5 minutes use the tinfoil to remove it from the pan to a cutting board.

at the top of the venison meatloaf it said ground pork, but the recipe said ground beef? which is it or can you use either one?

Hi Roxye, Thank you so much for taking the time to let me know. I have corrected the recipe to say ground pork. I am sure you could use ground beef as well...it is just to add some fat since venison is so lean. Thanks again, Kathleen
