Flourless Chocolate Cookies

The first step to making these Flourless Chocolate Cookies is to dump some icing sugar, cocoa powder, meringue powder and some salt into a medium bowl.

Then I used a fork to whisk these ingredients together.

Using a smaller bowl, I again used a fork to whisk together 2 eggs, and some vanilla extract.

Before adding the eggs to the dry ingredients I created a well in the centre.

I used the fork to stir the mixture until it just began to come together.

Now I added some milk chocolate chips and some semi-sweet chocolate chips to the mixing bowl.

I used a wooden spoon to stir until everything was well combined.  The cookie dough was gooey and dark.

Using a 1 tablespoon scoop I dropped the cookie dough onto a parchment lined baking sheet.  

Then I placed the baking sheet into a preheated 375F oven to bake for 10 minutes or until the tops were set.  Do not over bake.

After allowing the cookies to cool slightly on the baking sheet, I removed them to a coolig rack.

Flourless Chocolate Cookies will satisfy any chocolate cravings.  

Even family members that do not need to avoid gluten had trouble eating just one of these tasty little treats!

Ingredients You'll Need to Make these Flourless Chocolate Cookies:

  • 1 ⅔ cups icing sugar
  • ½ cup cocoa powder
  • 1 teaspoon meringue powder
  • ½ teaspoon salt
  • 2 eggs, large
  • 1 teaspoon vanilla extract
  • ½ cup milk chocolate chips
  • ½ cup semi-sweet chocolate chips

How to Make Flourless Chocolate Cookies:

  1. Preheat oven to 375F and line a baking sheet with parchment paper.
  2. Whisk the icing sugar, cocoa powder, meringue powder and salt with a fork in a medium bowl to combine.
  3. Whisk together the eggs and the vanilla with the fork in a small bowl.
  4. Make a well in the center of the dry ingredients and pour in the eggs.
  5. Stir the mixture with the fork until it just begins to come together.
  6. Add the chocolate chips and stir until well combined. The mixture will be quite sticky and very dark.
  7. Use a 1 tablespoon scoop to drop balls of dough onto the parchment paper lined baking sheet. These cookies will spread so leave space between.
  8. Bake for 10-12 minutes in a preheated 375F oven. Check after 10 minutes. Remove when tops are set.
  9. Cool on the baking sheet for 10 minutes before removing to cooling rack.
  10. Enjoy!
