To begin making Instant Pot Pork Roast with Baby Carrots and Potatoes I brushed mustard all over the roast and sprinkling salt and pepper on it as well.  

For this recipe I used a pork loin roast that was just over 2lbs.

I turned the Instant Pot on to Saute normal and when it was heated I quickly browned all sides of the roast.

When browned I removed the pork roast to a plate and added 2 cups of water to the Instant Pot.

I used a wooden scraper to remove the brown bits from the bottom of the pot.

When finished I pushed the cancel button on the Instant Pot.

I then added the trivet to the Instant Pot, returned the roast and surrounded the roast with baby carrots.  

How many carrots you add will depend on the number of people you are serving.

I also added a bag of small potatoes.  I chose red potatoes for colour this time.  

Then I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 18 minutes.

After the 18 minutes of cooking was complete I allowed it to do a Natural Release for 15 minutes before turning the steam release handle to the venting position.

I removed the lid from the Instant Pot.

I carefully removed the roast, potatoes, carrots and the trivet.

I reserved some of the liquid in the pot and added gluten free pork gravy mix to the reserved liquid. 

Press the saute button to the normal setting and stir until the gravy thickens

Once the gravy has thickened you can hit cancel or use the keep warm function.

Ingredients You'll Need to Make this Instant Pot Pork Roast with Baby Carrots and Potatoes:

  • 2lb Pork Loin Roast
  • 2-3 tablespoon mustard
  • Pinch of salt and pepper to taste
  • 1-2lb baby carrots
  • 1.5lb bag of small red potatoes
  • 2 cups water
  • 2 Club House Gluten Free pork gravy mix pouches (approx. .88oz each)

How to Make Instant Pot Pork Roast with Baby Carrots and Potatoes:

    1. Using a basting brush cover the pork roast with mustard.
    2. Sprinkle with a pinch of salt and pepper to taste.
    3. Turn the Instant Pot on to the Saute normal function.
    4. When heated, brown all sides of the pork roast.
    5. Remove the pork roast form the pot and set aside.
    6. Add the 2 cups of water to the Instant Pot.
    7. Using a wooden scraper deglaze the pot to remove all the brown bits from the bottom.
    8. Hit the cancel button on the Instant Pot.
    9. Place the trivet inside and place the pork roast on top.
    10. Pour the carrots around the roast.
    11. Place the small potatoes on top of the carrots around the roast.
    12. Put the lid on the Instant Pot, turn the steam release handle to the sealing position and set to Pressure Cook High for 18 minutes.
    13. After the 18 minutes I allowed it to do a Natural Release for 15 minutes before turning the steam release handle to the venting position.
    14. Remove the lid from the Instant Pot.
    15. Remove all the food and keep it covered to retain heat.
    16. Measure out 2 cups of the drippings and discard the rest.
    17. Return the 2 cups of drippings to the Instant Pot.
    18. Add the 2 pouches of gluten free gravy mix.
    19. Turn the Instant Pot to the Saute normal function and stir until gravy thickens.
    20. Once gravy thickens you are ready to slice and serve.
    21. Enjoy your pork roast with all the fixings!
