Almond Flour Banana Muffins

Almond Flour Banana Muffins are a nice moist snack or breakfast option.  These gluten free muffins are loaded with the goodness of almond flour and mashed banana.

This easy recipe makes a nice snack or breakfast option paired with your morning coffee or tea.

The recipe yields 12 muffins.

To begin making these Almond Flour Banana Muffins I dumped some brown sugar and vegetable oil into a large mixing bowl.

I used a large spoon to beat these ingredients until no lumps remained.

Then I stirred in  some large eggs and vanilla extract.

Next I added in the dry ingredients.

I measured in some almond flour, gluten free oat flour, baking soda, baking powder and salt. 

 I make my own oat flour by putting gluten free oats in my blender.

After the dry ingredients were incorporated into the batter I mashed up enough bananas to make one cup and added the mashed banana to the batter.

Then I sprayed a muffin pan well with cooking spray.

I used a scoop to drop the batter into the muffin pan and filled each one almost to the top.

Now the muffins were ready to be placed in a preheated 375F oven and baked for 20 minutes or until a toothpick inserted in the center came out clean.

After allowing them to cool in the pan for a few minutes I flipped the banana muffins onto their sides to continue cooling.

You could also transfer them to a cooling rack.

When they are cooled it is time to serve them up to family or guests.

  1. Preheat oven to 375F and spray a muffin pan with cooking spray.
  2. Dump the vegetable oil and brown sugar into a large mixing bowl and stir until combined.
  3. Add the eggs and vanilla extract.  Stir to combine.
  4. Measure in the almond flour, oat flour, baking soda, baking powder and salt.
  5. Mash enough ripe bananas to make one cup.
  6. Stir the mashed banana into the batter.
  7. Fill the muffin pan almost to the top with the batter.
  8. Bake in the preheated 375F oven for 20 minutes or until a toothpick inserted in the center comes out clean.
  9. Remove from oven and allow to cool in the pan for a few minutes before turning on their sides to continue cooling or transfer them to a cooling rack.
  10. Once cooled serve.
  11. Enjoy!
