Chewy Chip Bars are loaded with gluten free corn flakes and semi sweet chocolate chips. With just a few ingredients you can whip up this simple dessert recipe.
Eat these dessert squares warm or wait until they are completely cooled before slicing.
This recipe yields about 30 servings, but this is an estimate and number of servings will depend on your serving size preference.
Serve it as a stand alone dessert or add Chewy Chip Bars to an assorted dessert tray to suit any occasion.

The first step to make these Chewy Chip Bars was to prepare the gluten free corn flakes by using a rolling pin to crush them up.
Then I mixed some melted margarine and granulated sugar together in a mixing bowl using a large wooden spoon.
Next I stirred in some large eggs and vanilla extract.
After stirring in the eggs until well blended, I measured in some Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, the crushed corn flakes, baking powder and salt.
After stirring the batter I greased a 9″ x 13″ baking pan.
I spread the batter evenly in the pan before sprinkling some chocolate chips on the top.
Then I placed the pan into a preheated 350F oven for about 40 minutes or until it was light golden brown.
Once cooked, I removed the pan from the oven and allowed the Chewy Chip Bars to cool.
After cooling I cut them into squares.
These bars are really chewy when they are still warm. But can be a bit messy.
Warm or cooled these bars are a tasty addition to any gluten free dessert tray.

- 1 1/2 cups crushed Gluten Free corn flakes

How to Make Chewy Chip Bars:
- Preheat oven to 350F and grease a 9″ x 13″ baking pan.
- Crush the gluten free corn flakes in a ziploc bag using a rolling pin. Set aside.
- Combine the melted margarine or butter and the granulated sugar.
- Stir in the eggs and vanilla extract until well combined.
- Measure in the Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, salt, baking powder and the crushed corn flakes. Stir to combine.
- Once the batter is well mixed spread it out evenly in the prepared 9″ x 13″ baking pan.
- Sprinkle the semi sweet chocolate chips evenly over the top of the batter.
- Place baking pan in the preheated 350F oven for 35 – 40 minutes, until light golden brown.
- Remove from oven.
- Allow to cool before cutting into squares.
- Serve and enjoy!
