S’mores Brownies – Gluten Free

These chewy, chocolate S’mores Brownies are a decadent treat if you have been avoiding desserts due to a gluten intolerance.

This delicous recipe yields 9 – 12 brownies.  The yield will really depend on the size you cut to suit your needs and the occasion.

Layers of graham crackers, brownie and toasted marshmallows are a delight for the taste buds.

These gooey, chewy dessert squares are a great way to end a meal any time of the year!

To make these delicious S’mores Brownies I started by melting butter in an 8 cup (2 litres) microwave bowl.  

To the melted butter I added granulated sugar, Bob’s Red Mill Gluten Free All Purpose Flour, cocoa, baking powder and xanthan gum.

I used a wooden spoon to blend this mixture together well.

Next  I added eggs and vanilla.  The mixture was again blended well with a wooden spoon.

I folded in some mini marshmallows and milk chocolate chips.

Next I lined an 8″ square baking pan with parchment paper and sprayed it lightly with cooking spray.

I lined the bottom of the pan with some gluten free graham crackers.  I used the ones that were coated in chocolate but you can use plain ones as well.

After blending I scraped the batter into the cake pan on top of the graham crackers.

I spread the batter out evenly.

Then I placed the pan in centre of the oven and baked the brownies for 25 – 30 minutes or until a toothpick inserted in centre came out almost clean.

After baking I removed the pan from the oven.

Then I spread some more mini marshmallows on top of the hot brownies.

I returned the pan to the oven under the broiler for about 2 minutes or until they were golden brown.

Once browned I removed the brownies from the oven.

Remove from oven when marshmallows ae golden brown.

I immediately used a hot knife to cut through the marshmallows and a bit of the brownie.

After letting them cool for a couple minutes I used the parchment paper to lift the brownies out of the pan.

While they were still a bit warm I finished cutting the S’mores Brownies into squares.

These taste best and are easiest to eat while they are still a bit warm.  That way you can enjoy the soft and gooey marshmallow topping.

If you are serving them after they have cooled completely, you can heat up each serving quickly in the microwave if you want that warm, gooey experience.

  5. Blend ingredients well.
  6. Add 2 eggs and the vanilla and beat them into the ingredients already in the bowl.
  7. Fold in the chocolate chips and 1 cup of the marshmallows.
  8. Arrange the graham crackers in the bottom of the prepared pan, chocolate side up if using coated ones.
  9. Use a rubber spatula to scrape mixture on top of the graham crackers.
  10. Spread the batter out evenly in the pan.
  11. Put pan on middle rack in oven.
  12. Bake for 25-30 minutes or until a toothpick inserted in center comes out almost clean.
  13. Sprinkle the remaining cup of marshmallows over top of the hot brownie.
  14. Return the brownies to the oven under the broiler for 2 minutes or until golden brown.
  15. After removing from the oven use a hot knife to cut through the marshmallows and into the brownie a bit to make serving size pieces.
  16. Let cool a bit and then use parchment paper to remove brownie from the pan.
  17. While still warm finish cutting through the brownies.
  18. Serve warm and enjoy!
