To begin making Gluten Free Chocolate Layer Cake I dumped some shortening, large eggs, almond milk and vanilla extract into a large mixing bowl.

Then I used an electric hand mixer on low speed to beat the ingredients until they were well combined.

Next I added the dry ingredients to the mixing bowl.  I measured in some Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, granulated sugar, cocoa powder, baking powder, baking soda and a bit of salt.

I used the electric hand mixer on low speed again until all the ingredients were moistened and then I changed it to medium speed and continued beating for about 1 minute.

Once I had finished beating the Gluten Free Chocolate Layer Cake batter I greased and floured two round cake pans.

Then I evenly divided the batter between the two cake pans.

Next I placed the cake pans in a preheated 350F oven for 30 – 35 minutes or until a toothpick inserted in the center came out clean.

After removing the cake pans from the oven I allowed the cake to cool for about 10 – 15 minutes before inverting one layer onto a serving plate.

Once the cake was completely cooled I iced it with my preferred frosting.

Then I inverted the second layer on top of the first.

I continued with my preferred frosting until both layers were completely covered.

This Gluten Free Chocolate Layer Cake is now ready to serve unless you want to dress it up a bit more.

One option is to crush up your favourite chocolate bar like I did for my husband’s birthday cake.  Just make sure your choice is gluten free.

Slice into this moist, light cake and serve it up to your guests.

Sometimes I will use a cake slicer to create more layers depending on the occasion.

Enjoy Gluten Free Chocolate Layer Cake alone or add your favourite ice cream or some whipped cream.

However you choose to serve this decadant dessert your guests will enjoy its rich chocolate flavour and light texture!
