Gluten Free Oat Bars

These Gluten Free Oat Bars are rich, chewy, and packed with chocolatey goodness in every bite. Made with simple pantry ingredients, they’re an easy treat that’s perfect for snacking or dessert.

Gluten free oats create a hearty texture while sweetened condensed milk adds incredible sweetness and chewiness.

Chocolate chips melt throughout the bars, creating pockets of rich chocolate flavor.

This recipe can yield 24 to 36 squares depending on how you cut them up.  The size will depend on your occasion.

Chopped walnuts add a delicious crunch that perfectly complements the soft oat base.

To begin making Gluten Free Oat Bars I dumped some brown sugar, Bob’s Red Mill 1 to 1 Gluten Free Baking Flour and some gluten free quick cooking oats into a large mixing bowl.

Then I softened some butter in the microwave.

Next I dumped the softened butter into the mixing bowl with the other ingredients. 

I used a fork to combine the ingredients together well.

Then I measured some of the mixture out and set it aside for later.

Next I scraped the mixture into an ungreased 13″ x 9″ baking pan.

I pressed the mixture down into the pan with a fork before placing the pan in a preheated 350F oven.

After 10 minutes I removed the pan from the oven and poured a can of sweetened condensed milk over the partially baked crust.

I spread it out evenly with a spoon.

I also sprinkled on a mixture semi-sweet chocolate chips and milk chocolate chips.  You could swap out one of the chocolate chips for white chipits or use all three flavours if you prefer. 

The next ingredient that I sprinkled on top of the condensed milk was some chopped walnuts.

All the ingredients were then topped off with the reserved crust mixture I had set aside earlier.

Once I had sprinkled on the reserved crust mixture I used a fork to press the ingredients together.

Once my layers were complete I finished baking the bars for another 25 – 30 minutes or until it was starting to brown.  

After removing the squares from the oven I allowed them to cool completely in the baking pan.

Once cooled I cut this dessert recipe into squares.

  4. Add the softened butter to the mixing bowl.  Use a fork to combine well.
  5. Reserve 1/2 cup of the mixture and set aside for later.
  6. Press this mixture into bottom of a 9″ x 13″ ungreased baking pan.
  7. Place the pan in the preheated oven for 10 minutes.
  8. Remove from oven and spread the can of sweetened condensed milk evenly over the crust.  Spread with a spoon if needed.
  9. Sprinkle the two flavours of chocolate chips on top of the condensed milk.
  10. Sprinkle the chopped walnuts on top as well.
  11. Sprinkle the reserved mixture from earlier on top of all the ingredients.
  12. Use a fork to press the topping down firmly.
  13. Bake in the preheated 350F oven for another 25 – 30 minutes or until beginning to brown.
  14. Remove from oven and allow to cool completely in the baking pan.
  15. Once cooled cut into squares. 24 – 36 pieces.
