Pecan Pie Squares – Gluten Free

To begin making Pecan Pie Squares I dumped some margarine, Bob’s Red Mill 1 to 1 Gluten Free Baking Flour and granulated sugar into a mixing bowl. 

I combined them using an electric hand mixer.

Once the ingredients were blended they formed a crumbly mixture.  

I then dumped the mixture into an 8 inch square pan that had been sprayed with cooking oil and lined with parchment paper.

Using my hands, I pressed the crust down to pack it evenly in the pan.

Then I placed it in a 350F oven to bake for about 20 minutes or until golden brown around the edges.

While the base was cooking I prepared the topping by measuring some maple syrup, almond milk, brown sugar, the remaining margarine and chopped pecans into a sauce pan.

Then I stirred all the ingredients together over medium heat.

I continued stirring until the mixture came to a boil and then I let it simmer for 2 minutes.

When it was done simmering I poured it in the pan over top of the prepared crust. 

Then I returned the pan to the 350F oven for another 20 minutes.

After removing it from the oven I let it cool slightly before running a knife around the edges. 

I allowed it to cool completely in the pan before lifting it out with the parchment paper and cutting it into squares.

Ingredients You’ll Need to Make these Pecan Pie Squares:

  • 1 cup Bob’s Red Mill 1 to 1 Gluten Free Baking Flour
  • 1/4 cup granulated sugar
  • 3/4 cup margarine divided
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 2 tbsp almond milk
  • 1 1/4 cups pecans, chopped

How to Make Pecan Pie Squares:

  1. Preheat the oven to 350F. Line an 8-inch square pan with parchment paper, letting it hang over both sides. Grease the other two sides. Set aside.
  2. In a mixing bowl, combine flour, granulated sugar and 1/3 cup of margarine. Beat with an electric hand mixer until grainy.
  3. Press onto bottom of the pan.
  4. Bake for about 20 minutes or until edges are lightly browned.
  5. Meanwhile, in a saucepan, bring syrup, almond milk, and pecans to a boil with remaining margarine and brown sugar. Stir.
  6. Simmer for 2 minutes.
  7. Pour into pan over warm crust and bake for 20 minutes. Let cool.
  8. Run a thin blade around crust and let cool completely.
  9. Remove from pan and cut into 36 squares.
  10. Serve and enjoy!

Can I substitute light karo syrup for maple?

I'm curious if anyone has tried just almond flour instead of the BOB's? I have a large bag I would love to use up. My daughter-in-law is gluten free and it does pose a challenge. So glad to have ready-tried recipes.

@Kim M Thornton, almond flour does not work as a sub for gluten free flour in most cases. If you want to use almond flour, search recipes specifically for that.

What is Bob's Red Mill 1 to 1 Gluten Free Baking Flour mean?

Hi Joan, That is the brand name and type of flour that is used in the recipe. It is a Bob's Red Mill product and a 1 to 1 gluten free flour substitute for regular flour. This company has a gluten free all purpose blend as well. Take care, Kathleen
