Turtle Cookies - Gluten Free

Turtle Cookies take a popular chocolate candy and bake it into another classic dessert to create a decadent chocolate, caramel, pecan experience.

These cookies are crispy on the outside and a little chewy on the inside.  Just bake a little longer or a little less to get your desired texture and then enjoy.

This recipe yields about 68 gluten free Turtle Cookies when using a 1 tablespoon scoop.

Load up a plate of these cookies for an after school snack or an after dinner treat and watch them disappear.

The first step to baking this delicious dessert recipe was to dump some margarine, granulated sugar and brown sugar into a large mixing bowl.

Then I used an electric hand mixer to beat these ingredients together until they were creamed before adding in some eggs and vanilla extract.

I creamed everything together again with the electric hand mixer before adding in the dry ingredients.

The dry ingredients included Bob's Red Mill 1 to 1 Gluten Free Baking Flour, cocoa, salt, baking powder and baking soda.

After using the electric hand mixer to beat in the dry ingredients I chopped up some Turtle candies into small pieces and added them to the mixing bowl.

Once I had stirred in the Turtle pieces with a large spoon I lined a cookie sheet with parchment paper and used a 1 tablespoon scoop to drop the cookie dough onto the sheet.

I placed the cookie sheet into a preheated 350F oven for 10 - 12 minutes or until bottom edges had browned.

I allowed the Turtle Cookies to cool for a few minutes on the baking sheet before transferring them to a cooling rack.

Turtles Cookies are real treat for us gluten free eaters but they will be enjoyed by everyone.

Ingredients You'll Need to Make these Turtle Cookies:

  • 1 cup margarine

  • 1 teaspoon vanilla extract

  • 1 ½ cups chopped Turtles (about 12)

How to Make Turtle Cookies:

  1. Preheat oven to 350F and line a cookie sheet with parchment paper.

  6. Chop up the Turtle candies and stir them into the cookie dough with a large spoon.

  9. Remove from oven and allow to cool on the cookies sheet for a few minutes before transferring to a cooling rack.
