Gluten Free Blondies

Gluten Free Blondies are a nice alternative to brownies.  These butterscotch flavoured dessert squares are a chewy treat that will be enjoyed by young and old alike.

Your guests will not believe they are gluten free.

This dessert recipe yields 16 squares, but yield will vary depending on your preferred serving size.

These moist and chewy squares are easy to make and will complement any dessert tray at any time of the year.

To make these delicious Blondies I started by melting margarine in an 8 cup (2 litres) microwave bowl.  

Butter can also be used but I have to avoid cow's milk as often as possible.

To the melted margarine I added brown sugar, Bob's Red Mill 1 to 1 Gluten Free Baking Flour, baking powder, salt, large eggs and vanilla extract.

I used a wooden spoon to blend this mixture together well.

Next I dumped in some butterscoth chips.  I blended them in with a wooden spoon.

Next I lined a square cake pan with parchment paper and sprayed the exposed sides with cooking spray.

Then I scraped the batter into the prepared pan.

I placed the pan in the centre of the preheated 375F oven for 25 minutes or until a toothpick inserted in the centre came out clean.

Allow the Blondie to cool in the pan.

Then I used the edges of the parchment paper to remove it from the pan.

When cooled I cut the Gluten Free Blondie into squares.

 

These flavourful dessert squares are the perfect ending to any meal.

Ingredients You'll Need to Make these Gluten Free Blondies:

  • ½ cup margarine or butter
  • 1 cup brown sugar
  • ¾ cup Bob's Red Mill 1 to 1 Gluten Free Baking Flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 eggs, large
  • 1 teaspoon vanilla
  • ⅔ cup butterscotch chips

How to Make Gluten Free Blondies:

  1. Preheat oven to 375F.
  2. Line a square pan with parchment paper and spray remaining sides with cooking spray.
  3. Melt ½ cup margarine or butter in a large microwaveable bowl.
  4. Add brown sugar, Bob's Red Mill 1 to 1 Gluten Free Baking Flour, baking powder and salt to bowl.
  5. Add 2 eggs and the vanilla and beat them into the ingredients already in the bowl.
  6. Stir in the butterscotch chips.
  7. Use a rubber spatula to scrape mixture into the parchment paper lined pan.
  8. Put pan on middle rack in oven.
  9. Bake for 25 minutes or until a toothpick inserted in center comes out almost clean.
  10. Let cool and then use parchment paper to remove brownie from the pan.
  11. When finished cooling slice into squares.
