To begin making Mandarin Cake I dumped some Bob's Red Mill 1 to 1 Gluten Free Baking Flour and some granulated sugar into a medium size mixing bowl.

After stirring them together I added 2 large eggs, baking soda, salt and the juice from one tin of mandarin oranges.

I stirred the ingredients together until they were well blended.

Next I dumped in the mandarin orange segments.

I stirred until they were incorporated into the cake batter.

Then I greased a square cake pan and scraped the cake batter into it.

Once all the batter was scraped into the pan I placed it in a preheated 350F oven for 30 - 35 minutes or until a toothpick inserted in the center came out clean.

When there was about 10 minutes left in the baking time I started to prepare the sauce on top of the stove.  I turned a burner to medium/low heat and placed brown sugar, margarine and almond milk into a small pot.

I stirred the contents of the pot until they had all blended together and warmed.

When I pulled the cake out of the oven I turned the oven to broil.

Then I poured the heated sauce over top of the cake.

I returned it to the oven under the broiler for between 30 and 60 seconds.  After removing it from the oven I allowed it to cool for about 15 minutes.

Then I cut the warm Mandarin Cake into serving size pieces.

Eat it plain or top it off with a dollop of whipped cream or ice cream.

You will enjoy every bite of this light and easy dessert!
