Apple Sauce Muffins – Gluten Free

Our trees produced an abundance of apples this year so I cooked up multiple batches of Chunky Apple Sauce to have on hand for main courses as well as baking.

These gluten free Apple Sauce Muffins are the perfect way to incorporate our harvest into a snack or breakfast treat.

You could also use store bought apple sauce for this recipe if you do not want to make your own apple sauce.

This quick and easy recipe yields 12 muffins.

Hints of cinnamon and nutmeg add to the flavour as well as some chopped pecans.

Apple Sauce Muffins are the perfect complement to your morning coffee or make a great snack on the run.

To begin making Apple Sauce Muffins I dumped some granulated sugar and margarine into a large mixing bowl and creamed them together using an electric hand mixer.

Then I added in two large eggs and some vanilla extract and used the hand mixer to beat them until light and creamy.

Once the ingredients were well blended I added some Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, baking soda, baking powder, salt and nutmeg.

I used the electric hand mixer again and just beat these ingredients in quickly.

Then I folded in some Chunky Apple Sauce.

After folding in the apple sauce it was time to prepare the muffin pan.

I lined a muffin tin with cupcake liners.

Next I filled the muffin cups 3/4 full with the prepared batter.

For the final touch I sprinkled some chopped pecans on top of the batter.

I baked the Apple Sauce Muffins in a preheated 400F oven for 10 minutes.

Then I reduced the oven temperature to 350F  and continued baking for another 6 – 8 minutes or until a toothpick inserted in the center came out clean.

I allowed the muffins to cool in the pan for about 10 minutes before flipping them on their sides to finish cooling.

  • 1/3 cup granulated sugar

  4. Stir in the Bob’s Red Mill Gluten Free 1 to 1 Baking Flour, baking soda, baking powder, salt and nutmeg just until combined.
  5. Fold in the apple sauce that you are using.
  6. Fill the muffin cups almost to the top.
  7. Add a few chopped pecans to each muffin cup on top of the batter.
  8. Place in preheated 400F oven for about 10 minutes and then reduce heat to 350F.
  9. Continue baking for another 6 to 8 minutes or until a toothpick inserted in the center comes out clean.
  10. Remove from oven and allow to cool in pan for a few minutes.
  11. Turn on sides or turn out onto cooling rack to finish cooling.
  12. Serve and enjoy!

I made these today and was pleasantly surprised! These muffins are delicious and have a great texture for a gluten free muffin. I topped with chopped walnuts and turbinado sugar. I will make again! They are best when cooled before eating.
